This recipe is traditionally served with fried eggs and sliced tomato. Heat 2 tbsp of oil in a small pan. Add the beaten egg and let it set like a thin pancake. Cook until golden. Slide the omelet onto a plate. Cut it into strips, set aside & keep warm. Place the onions, garlic, chilies, and shrimp paste, in an electric blender and puree, or finely chop and mix. Heat the rest of the oil in a large pan. Add the puree and fry, stirring constantly, until it is golden brown. Stir in the shrimp and fry, stirring, until they are pink. Stir in the diced chicken, rice, soy sauce, sugar, & lemon juice. Fry the mixture, stirring constantly, until the mixture is heated and cooked.
